Swallowtail Spring Festival 2015

Swallowtail Farm is hosting it’s 6th annual Spring Festival on Saturday, April 11th from 11am - 9pm. The infamous farmer Joel Salatin Will be at the event until 3:45pm and will be giving a keynote speech at 2pm. There will also be a pre-festival workshop with Joel from 9am - 11am. Salatin was featured in Michael Pollen’s best selling book The Omnivores Dilemma, and has been dubbed “the high priest of the pasture” by the NY Times. Salatin is one of the most influential, entertaining and compelling voices in the small scale sustainable farming movement today. Admission to the festival includes all workshops, demonstrations & activities. Kids 12 and under are free! Tickets will be available at the gate for $25. The Swallowtail Spring Festival is a celebration of community, locality, rural wisdom & Spring’s bounty. There is truly something for everyone at this dynamic and joyous event. 

  • Local food & drink will be served up all day long by Swamp Head Brewery, Humble Pie Pizza, Off the Griddle, Fables Catering, Heart & Seul, Jersey Creamery Ice Cream, & Fed Food co.
  • There will be live music all day long provided by The Shambles, Captive Eddies, Flat land, 
  • Kids activities will include face paining, kite making, farm tours, hay bale maze, chicken coop mural painting, sprinkler splash zone, & much more. 
  • There will be workshops throughout the day on cheese making, wild foraging, backyard bee hives, cut flower propagation, bio-char making, Florida archeology & basket weaving.
  • Demonstrations will include blacksmithing, pottery making, kite building & yarn spinning. 
  • Joel Salatin will be giving two short workshops on grass farming & rotational grazing.

About Joel Salatin: 

"Joel Salatin is a self-described environmentalist capitalist lunatic farmer, or as the New York Times calls him, "the high priest of the pasture." You may remember him from The Omnivore's Dilemma, in which he was profiled at length by Michael Pollan. Salatin's innovative farming system—where the animals live according to their "ness," the earth is used for symbiosis, and happiness and health is key—has gained attention from around the country, and he travels in the winter giving lectures and demonstrations. He is the author of a number of books including Holy Cows and Hog Heaven, Everything I Want to Do Is Illegal, You Can Farm, Pastured Poultry Profit$, and Family Friendly Farming." - Makenna Goodman
We are so pleased to be hosting Joel at our little farm! Joel is a famous and infamous farmer and food advocate who works his family land in Swoope, VA when he isn't off spreading the good word of great food. He is a captivating and hilarious spokesperson for the small scale, sustainable food movement and will have you rolling with laughter just after he has made your eyes well with tears. It's a totally entertaining and inspiring ride with this guy that is sure to keep you on your toes. 

The Experience

Come hang out with Joel, the Swallowtail crew and a number of our local farming friends for a one of a kind Farm to Table experience. If you're looking for a way to get a little one on one time with Joel, or just to enjoy his effervescent company, this is the place to be!

This will be a very small and intimate dinner, so there will be plenty of space for questions and conversation. We will have a meet and greet happy hour as guests arrive, this way folks can settle in with a Swamphead beer and a good conversation. Once everyone is with us, we will go on a walk about with Joel so everyone can see the farm and get a sense for our practices.

Dinner will be served around 6:30, and you can expect great things. Chef Chase from The Top will be serving up a delectable four course creation that is bound to please. We will be offering wine or beer pairings with each course, if you wish to partake. We will be featuring food from the other local farmers in attendance and you'll be able to sample many of our areas stellar products and meet the folks who made them. Dinner will be held at a family style harvest table looking out over the rolling hills of Northern Alachua. This is sure to be an inspiring, educational, and delectable event. We look forward to feeding you! 

Schedule

4:30 pm – Guests will arrive to the farm to a cold beverage and a beautiful view. You will have the opportunity to chat with Joel & the local farmers in attendance. Feel free to dress casually and wear comfortable shoes. Take in the scene and enjoy!
5:30 – We will do some brief introductions followed by a fun and informative farm tour led by our crew & Mr. Salatin. 
6:30- We will gather back at the harvest table for libations, music, and good company.  During this time you will get a chance to meet the chef, and they will talk a bit about the meal they have prepared for you.
7:00 – Cheers! The rest of the courses will follow from here. Take your time and enjoy your meal. After all, It’s a one night only seasonal dinner prepared with love.

They will delight your culinary senses with delicious cuisine made from the flowers, herbs, proteins and vegetables grown and raised at Swallowtail, and surrounding local farms. We have partnered with Swamphead Brewery and Citizen's Co-Op, to bring you the best local brews and organic wines. Vegan and vegetarian options are available. Dinner tickets will make the perfect anniversary gift, birthday present, romantic date, family occasion or destination dinner. Come out to Swallowtail and connect with your food and the land on which it has been cultivated.
