February - A Swallowtail Farm Dining Experience

Enjoy a multi-course meal filled with super fresh farm offerings, oysters from Val Leitner of Oyster Catcher Shellfish, and a specialty wine pairing from Sommelier Katherine Haswell! This is going to be a truly memorable evening.

Charlie Keller made his foray into cooking at Johnson & Wales University, studying at both their Providence and Denver campuses. After graduating, he headed back home to New York and began cooking for some of the best restaurants in Manhattan, including Ouest, West Branch, Stone Park Café, and others. Later, Keller founded a successful catering company that is still going strong under the leadership of his founding partner. He then started on a decade-long stint of opening multiple restaurants in New York and Long Island, and co-owning one: The Rex Burger & Lobster. Soon after that Charlie and his wife moved to Gainesville and he began work with Pyramid Hotel Group in the conceptualization of Covey Kitchen & Cocktails at Hotel ELEO. He opened Covey to great success, earning a Top 100 spot in Yelp’s best restaurants country-wide. Charlie is now working on projects in Gainesville and in New York, and relishes the opportunities to cook for Swallowtail’s Farm dinners.


Born and raised in Gainesville, Katherine Haswell is a Certified Sommelier through The Court of Master Sommeliers, and holds certificates with the Wine & Spirit Education Trust as well. A long time industry professional, she has done everything from restaurant management, worked as a representative for wine and spirits distributors, taught wine classes as an educator at Santa Fe College (and privately), held the role of Wine Director at several establishments, worked as a restaurant sommelier from Gainesville to NYC, owned and operated her own wine bar and restaurant, and is a Wine Consultant for local and regional establishments.

Tickets are NON-REFUNDABLE and NON-TRANSFERABLE if canceled within 7 days of the event. Reservations are rain or shine.   We will offer a credit toward a future dinner in the rare event of a cancellation. Dinner credits must be used within 12 months of the original purchase date.  If we must postpone or cancel the event due to unforeseen circumstances, we will provide notice at least 24 hours prior to the event.  If the event is rescheduled, it will be held the following day (Sunday) at the same time.

Dinner Tickets include the following:

-all specialty non-alcoholic & craft alcoholic beverages

-a one hour informative farm tour by farm founder, Noah Shitama

-live music by local musicians

-a three to five course dinner and hors d'oeuvres curated by local guest chefs

-a one-of-a-kind, outdoor dining experience under the ancient oaks of old Rochelle

Dinners are a set menu designed by our guest Chefs and excite flexible, adventurous eaters. If you or someone in your party has individual dietary needs, please email us at swallowtaildining@gmail.com upon purchasing tickets so that we can work to accommodate your request. While most dietary needs can be accommodated, please understand that heavy restrictions or multiple food requests may be difficult to fulfill.  Because the meal is made from the freshest, most hyper-local and in-season ingredients, we do not release menus before the event itself.  We ask that you have trust in our guest chefs and our 11 seasons of hosting farm-to-table events!  We promise you'll be glad you waited for the main event reveal.  

We proudly serve brew from our local craft breweries and certified organic/biodynamic wine. For the safety of our guests, we suggest that you either arrange for a designated driver within your party, or plan for a driving service to get you home safely.

This event is hosted on a working farm. Please dress according to the weather and wear proper footwear; we suggest flat, close-toed shoes or boots.  If the evening may turn chilly, bring layers so that you can be comfortable throughout the temperature drop.
