Swallowtail has been a pathfinder in the Floridian farm to table movement. Since its inception in 2009, the farm has collaborated with brilliant local chefs, fellow producers, musicians, brewers, non-profits and artists to bring authentic elevated dining experiences to our community. In a hurried, disposable culture, we believe that reconnection with our food offers refreshing and uplifting meaning. These dinners are a full-circle experience, where you will be treated to an experience of a meal - out in the fields and pastures as living plants and animals, in conversation with the farmers who have raised it, the chefs who have prepared it, and a community to share it with. There is simply no fresher way to eat.

Phil’s cooking career began when he was 14 years old as a student of the Eastside Institute of Culinary Arts magnet program. Afterwards, he moved on to attend the Culinary Arts Program at Johnson & Wales University in Providence, Rhode Island. He then spent his time trying to find his chef voice, working with respected chefs and gaining experience. Now 35, he’s been cooking in Gainesville since 2017, with a focus on utilization of local farms and elevating the local food scene.
We are thrilled to open our 2023-24 Season of Dining Experiences with the brilliant Chef Clay Conley.
